Cinco de Mayo recipes and happenings

http://www.lehighvalleylive.com/food/index.ssf/2012/05/cinco_de_mayo_recipes_and_happ.html FROM THE EXPRESS TIMES Cinco de Mayo is one of those holidays where I tend to get excited because, in my mind, there's a stockpile of inventive new recipes I want to try for the holiday. But then, life happens. And all those recipes I had amassed in my head are left unmade and uneaten until next year. Here's my list of Cinco de Mayo party-worthy foods. Share yours in the comments section below. Not up to cooking? Leave it to the professionals and head to La Lupita Taquiera for live mariachi and free Coronas on Saturday, or get the party started early tonight at Hotel Bethlehem, 437 Main St., Bethlehem, at a Cinco de Mayo Fiesta. Hotel Bethlehem's fiesta runs 8 p.m. to midnight tonight at Club Mural (with live music from Freddy Rivera y su Conjunto Antillano). Plus you can find local Mexican restaurants in our new Restaurant Search feature (on the right-hand side of the Food page). Cinco recipes Learn to make your own homemade flour tortillas (allrecipes.com) Churros con Chocolate (Anne Burrell) Basic salsa recipe (Alton Brown) Black bean and chorizo sopecitos (these look like little Mexican pizzas with beans, chorizo and cheese - yum!) Tortilla crusted fish with Radish Salad (a little crunch and a little kick) Red Snapper Veracruzana (flavored with bay leaves, parsley, oregano, green olives, capers and raisins) Turkey Tamales with Mole Negro (epicurious.com) Crazy salsas I had to give these their own category, because some of them are just plain bizarre - but intriguing. Mushroom salsa (food.com) Strawberries salsa (a sweet taste on the classic) Lime cucumber salsa (this sounds refreshing and zesty, minus the red tomatoes that always stain!) Salsa fresca (a vibrant, less juicy alternative)
